Masterclass in curing & preserving meat with Kindling Restaurant – Brighton, UK

In this hands-on class, chefs Holly Taylor and Toby Geneen (who started his career at St John’s London) will help you work with a range of quality meats from Brighton’s own Barfields Butchers. As well as experience and knowhow in smoking and curing, you will learn how to mix two super marinades flavoured with herbs and spices such as coriander, juniper, rosemary, garlic, allspice and bay. And you will leave with a delicious selection of cures, as far from the industrially-produced preserved meats in your local supermarket as you can wish for.
