‘Summer of Charcuterie 2020’ Partner – Peacock Salt

Peacock Salt - Home | Facebook

Alongside our main sponsor Angel Refrigeration we would like to extend our gratitude to the wonderful Peacock Salt for being our other partner in putting on the huge review of British Charcuterie in 2020, helping us take an in depth look at the range and variety of the sector as it currently stands. New innovative makers are putting out some truly fascinating products while classic cuts are being fine tuned to ensure british made cured meats are every bit the quality of their traditional continental counterparts.

As we all know, charcuterie starts with salt. Its at the heart of the entire process, its what cures our bacons and our hams, as well as being the key ingredient alongside your well sourced meats, for the flavours we all love. To put it simply, no salt, no cured meats. As our own motto states – Meat, Salt, Care and Patience are the vital ingredients behind all good Charcuterie.

Peacock Salt is a company that was founded in 1874 by John Craig Peacock. Starting out as just a shipping company agent in the heart of Glasgow it would gradually grow into what has now become one of the largest food salt suppliers worldwide. This long and successful century of trading make Peacock Salts the oldest salt company in the United Kingdom by a margin, and indeed one of the oldest in the world.

5 generations later, the current Managing Director, Gregorie Marshall, is just as committed to ensuring the company continues to grow and adapt “we are committed to understanding the products and our customer needs more than ever. As a family business, we take the long term view – customer/employee relations, integrity and trust are paramount, over and above turnover – we are, indeed, Serious about Salt”. And this is evident in the commitment they show to their partners and customers in the charcuterie industry. Despite the havoc currently suffered by the food and hospitality industry as a whole, some have seen that pulling together, and investing in the people and businesses that keep our belly’s full and our flavours strong, is what will allow our industry to continue to thrive in the UK, so special thanks must be given to Peacock for their help and sponsership of the Summer of Charcuterie 2020.

As well as serving various markets with salts for many industrial processes, what will be of particular interest to members of The Charcuterie Board will be Peacocks’ many food grade salts to match specific business requirements. For the highest standard and purity, Peacock can offer PDV food grade salts made in the UK which are BRC certified. For specialist food processing they can offer a range of sea, rock and curing salts, each coming in different grain sizes to suit your application. to see the full range of salts Peacock have to offer, see their website here- https://www.peacocksalt.com/

Thank you, once again, to Peacock Salt for helping make 2020 the ‘Summer of Charcuterie’.
